Avocado toast has been seriously popular these day for obvious reasons. It’s easy to make, healthy, and oh-so-delicious!
I’ve been trying to eat a super plant based diet lately. So when my mom and sisters came for a visit today, I made us the biggest, most delicious fig salads and my favorite avocado toast!

Raw Sunflower Seeds
I love topping my avocado toast with these sweet little Sun Gold cherry tomatoes. They are so juicy, a little bit tangy, and add such a nice color to the table. I also like the added crunch from the raw sunflower seeds. These small seeds are very high in vitamin E and rich in antioxidants too!
After lunch, we had some homemade sorbet. It was a recipe that I whipped together last night and was so easy to make. I still have a little bit left over so I will try to snap some photos so that I can share the full details in a later post. After food, we walked around downtown and enjoyed the fresh autumn air for a few hours before going for dinner.
I’ve been so happy to spend time with my family lately. Having the girls here (minus my oldest sister, Jessica) makes my heart feel so full! With life as busy as it is and a quite a few miles between us, it’s not always easy to be together. But I’m grateful that we make time for each other to relax and laugh together.
Now I’m off for bed. A new work week starts bight an early tomorrow!
