Here’s a recipe for a quick and easy walnut banana bread. I made it the other afternoon here at Chateau de Burnand and used the fresh walnuts which came from a tree on the property.
One of the best parts about living at the chateau is having access to the amazing kitchen. I’ve really enjoyed making use of it during our time here – it has everything you could imagine and more!
– Burnand Walnut Banana Bread –
BATTER
3 Over-Ripe Smashed Bananas
Ground Oat Flour, 230 grams / 1 cup
Wheat Flour, 50 grams / 1/4 cup
Sugar, 50 grams / 1/4 cup
Baking Powder, 1 teaspoon
Dash of Salt
2 Eggs
TOPPING
Chopped Walnuts, 100 grams / 1/2 cup
INSTRUCTIONS
Preheat over to 180 c / 350 f. In a large bowl, mix all batter ingredient together until totally blended. Pour batter into a very well-greased baking form. Cover top with chopped walnuts and place in the oven on center rack. Bake for about 20 minuets. Remove from form and let cool.
