



Hey fellows,
So today I woke up pretty early, snoozed in bed for a bit then got up and ran 7 miles before going to yoga class. By the time I got home, I had worked up a massive appetite.
So I made this delicious brunch – fried egg, sautéed spinach, rosemary sweet potatoes, buttered bagel, berries, and iced espresso with milk. Yum!
I think my favorite part of this brunch was the sweet potato chips – you can make them in the microwave surprisingly quick. Here’s my recipe:
Rosemary Sweet Potato Chips
Toss together:
Thinly sliced sweet potatoes
Chop fresh rosemary
Olive oil
Salt and pepper
Spread the seasoned potatoes out on a large plate and microwave for 5 mins.
That’s literally all there is to it… just be careful to not chop your fingers off when slicing 😛
